Pho K Fusion Restaurant Overview

Pho K Fusion is a relatively new Vietnamese restaurant that recently opened in Kanata. One of its biggest advantages is simple but important: it has its own parking lot, which makes visiting easy. In Kanata, that’s expected, but it’s still appreciated.

The dining space is modest, with about 10 tables, giving it a smaller, neighbourhood feel rather than a large bustling pho hall. It feels clean and casual — nothing flashy, but comfortable enough for a sit-down meal.

What makes Pho K Fusion stand out is its build-your-own pho and stir-fry concept. Instead of flipping through multiple pages of pre-set pho combinations — and still not finding exactly what you want — you can customize your bowl. That flexibility is genuinely refreshing. Many pho restaurants offer fixed combinations, and if you want something slightly different, you’re either stuck compromising or making special requests. Here, the customization is part of the design.

Service during our visit was efficient, and dishes came out in a reasonable time frame. Overall, it feels like a restaurant with a solid concept that just needs consistent execution to really shine.

Bun Bo Hue

The Bun Bo Hue from Pho K Fusion was one of the stronger dishes we tried.

The broth was flavourful and well seasoned, with that signature spicy, slightly lemongrass-forward depth that Bun Bo Hue is known for. It wasn’t overwhelmingly spicy, but it had enough character to distinguish it clearly from regular pho.

Traditionally, Bun Bo Hue is served with pork hock, and this version stayed true to that. If you’re not a fan of pork hock — especially the fatty, skin-on texture — this dish may not be for you. But if you enjoy it, this was well executed.

The pork hock was tender, benefiting from the fat and collagen that give it that melt-in-your-mouth quality when prepared properly. The noodles had a good texture, not mushy and not too firm.

Overall, this was a satisfying and comforting bowl. If you’re debating between pho and Bun Bo Hue, this might actually be the safer bet here.

The Pho with Beef Brisket and Well Done Beef from Pho K Fusion was more of a mixed experience.

The brisket was good — tender, flavourful, and what you’d expect from a proper pho bowl. No complaints there.

The issue was the well done beef.

To clarify, ordering “well done beef” in pho is not the same as ordering a steak well done. In most pho restaurants, the well done beef slices are still tender, often slightly fatty, and very enjoyable. That’s the expectation.

Unfortunately, that wasn’t the case here. The well done beef was very dry and unpleasant to eat. It lacked the tenderness and fat ratio that typically make this cut enjoyable in pho. It felt overcooked in a way that made it chewy rather than satisfying.

The broth itself was just okay. It wasn’t bad, but it didn’t stand out either. It lacked that deep, aromatic complexity that makes a pho broth memorable.

Because of the dry beef, this bowl felt underwhelming overall.

Order Again? No.

The second pho from Pho K Fusion we tried included brisket, well done beef, and tendon.

The pattern continued.

The brisket was good again. The tendon was also good — nicely cooked with that soft, gelatinous texture that tendon lovers look for.

But once again, the well done beef was terrible. Dry, tough, and unpleasant to chew. It’s frustrating because it consistently dragged down what could have been a solid bowl.

The broth here was similar to the first pho — acceptable but not exceptional. Nothing wrong with it, but nothing particularly memorable either.

If you were to build your own bowl here, I would strongly recommend skipping the well done beef entirely.


The Build-Your-Own Concept

The most interesting aspect of Pho K Fusion is still the customization model.

Being able to choose exactly which proteins you want — without being locked into preset combinations — is genuinely useful. For example, if you wanted brisket and tendon only, or rare beef and tripe without anything else, you can tailor your bowl exactly to your preference.

This flexibility is something I wish more pho restaurants offered in a straightforward way.

However, customization only works well if each component is strong. When one of the proteins — like the well done beef here — is noticeably weaker, it becomes a riskier choice.

Final Thoughts

Pho K Fusion is a promising addition to Kanata’s Vietnamese food scene. The parking is convenient, the restaurant is clean and casual, and the build-your-own concept is a welcome change from traditional pho menus.

The Bun Bo Hue was strong, with a flavourful broth and tender pork hock. The brisket and tendon in the pho were good.

Unfortunately, the well done beef was consistently dry and disappointing, which significantly affected the pho experience. The broth itself was serviceable but not standout.

Would I return? Possibly — but I would adjust my order carefully. I would skip the well done beef entirely and focus on brisket, tendon, or even explore more of their customizable options.

Pho K Fusion has a good concept and solid foundation. With improved consistency in certain proteins, especially the well done beef, it could become a much stronger option in Kanata.
